Valerio was born in Abruzzo, Italy, where food and tradition were inseparable. He began working as a pizza chef at 15, and in 1999 his passion for new adventures brought him to Australia. Over the years he built his experience working at different venues and catering events such as the Ord Valley Muster, Taste of Great Southern and Taste of the Gascoyne. In 2015, Valerio founded Flour and Fire, driven by a love of artisanal food making and ancient cooking methods. His dining room - built from recycled and natural materials - is home to one of Perth's most unique private dining experiences. Here, menus celebrate local seasonal produce, history, and culture, cooked with fire and shared around the table.
